Asparagus & Radish Salad

The crunchy, peppery bite of radishes and the mild flavor of tender asparagus mix into a wonderful salad. Don't toss the tops! Radish greens add a splash of color and a delightful texture, making this salad not only delicious but also visually stunning.
Course Salad

Ingredients
  

  • 1 bunch asparagus, chopped into 1 inch pieces
  • 1 bunch radishes with green tops, thinly slice radishes & reserve tops
  • 1 small bunch scallions, thinly sliced white and green parts

Dressing

  • 1 ½ tsps dried herb blend, such as Italian blend
  • 2 tbsp neutral oil
  • 2 tbsp honey
  • 2 tbsp lemon juice or apple cider vinegar
  • salt & pepper to taste

Instructions
 

  • Chop the asparagus, scallion and radish tops. Thinly slice the radishes. Set aside
  • In a large bowl, whisk the oil, honey, apple cider vinegar (or lemon juice), and dried herbs. Salt and pepper to taste.
  • Add the vegetables and greens to the bowl and gently toss to combine. Serve & enjoy!
