Peach & Tomato Summer Salad

This peach and tomato salad is a delicious way to taste and celebrate Summer! The combination of skin-on peaches and tomatoes of various colors, sizes, and shapes creates a sweet-savory salad.

Ingredients
  

  • 1 cup pinto beans, prepared and cooled if using dried
  • 1 lb. tomatoes, sliced or diced
  • 2 medium peaches, sliced or diced
  • 2 cloves garlic, thinly sliced
  • 1 large bell pepper, thin slices or diced
  • 1-2 jalapenos, thinly sliced (remove seeds for less heat)
  • 1 bunch fresh tender herbs such as cilantro, parsley, mint, basil
  • 2 tbsp olive oil
  • 2 tbsp lime juice or apple cider vinegar

Instructions
 

  • Cook beans if using dried or rinse canned beans. Be sure cooked beans are cooled.
  • Slice or dice the tomatoes and peaches in similar sizes and place in a large bowl.
  • Add thinly sliced garlic, sliced/diced bell pepper and thinly sliced jalapeno to the bowl with tomatoes and peaches.
  • Roughly chop herbs and add to bowl.
  • Add beans, olive oil, and lime juice/vinegar to the bowl of ingredients.
  • Toss the salad and enjoy or let sit for 1-4 hours to marinate the flavors. If letting sit, tomatoes will release liquid so you can drain liquid and serve salad with a slotted spoon.
