Winter Squash Grain Bowl
Bowl meals have become a 'trendy' menu item, but we've always been a fan because it's easy to prepare and a great way to turn random ingredients into a healthy dinner. A good grain bowl can be simple in ingredients but be sure it is well-seasoned, and play up contrasts in color, texture, and flavor.

Grains
- 8 oz. grain bowl mix
- 1 3" piece lemongrass
- 2 cups water
Winter Squash
- 1-2 winter squash (seeds reserved), diced and roasted (peeled depending on the variety of squash)
- olive oil, salt, and pepper for roasting
Roasted seeds for garnish
- squash seeds, cleaned and dried
- garlic powder, salt, and pepper to taste
- 1 tsp cooking oil
- 1-2 scallions, thinly sliced
Squash Instructions
Preheat oven to 425°.
Cut squash in half and scoop out the seeds (save to roast and use for garnish)
Add diced squash to a large baking sheet and toss with oil, salt, and pepper. Roast for 30-40 minutes until golden brown.
To serve, spoon grain into bowls and top with squash. Garnish with roasted seeds and scallions.
Roasted Seed Garnish
Keep the oven at 425°.
Clean the seeds and remove any leftover pulp. Day by lying flat on a kitchen or paper towel.
Toss seeds with garlic powder, salt, and pepper. Spread seeds on a baking sheet and bake for 10-20 minutes or until fragrant.
Once cooled, toss with scallions and use as a garnish.
