Honey Ginger Kale & Carrot Salad

Ingredients
  

  • 3 medium carrots, sliced or grated
  • 2 spring red onions
  • 1 bunch kale or leafy greens, chopped or torn
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 1 teaspoon ground ginger
  • salt & pepper, to taste

Instructions
 

  • In a medium-sized bowl, combine the vinegar and honey. Slowly whisk in the olive oil. Add the ginger and season with salt and pepper.
  • Add the kale and toss until coated with the vinaigrette. Add in the carrots and onions and toss all the ingredients.
  • Serve chilled and enjoy!
