Honey Ginger Kale & Carrot Salad
This vibrant and flavorful salad features the earthy crunch of kale, the sweet zest of grated carrots, and the unique bite of spring red onions - young, tender onions with a mild flavor and a hint of sweetness. Tossed in a delightful dressing of apple cider vinegar, honey, olive oil, and a touch of ground ginger, this salad is a perfect balance of sweet and tangy.
- 3 medium carrots, sliced or grated
- 2 spring red onions
- 1 bunch kale or leafy greens, chopped or torn
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1 teaspoon ground ginger
- salt & pepper, to taste
In a medium-sized bowl, combine the vinegar and honey. Slowly whisk in the olive oil. Add the ginger and season with salt and pepper.
Add the kale and toss until coated with the vinaigrette. Add in the carrots and onions and toss all the ingredients.
