Honey Ginger Kale & Carrot Salad

Ingredients
- 3 medium carrots, sliced or grated
- 2 spring red onions
- 1 bunch kale or leafy greens, chopped or torn
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1 teaspoon ground ginger
- salt & pepper, to taste
Instructions
- In a medium-sized bowl, combine the vinegar and honey. Slowly whisk in the olive oil. Add the ginger and season with salt and pepper.
- Add the kale and toss until coated with the vinaigrette. Add in the carrots and onions and toss all the ingredients.
- Serve chilled and enjoy!
