Sweet Pepper & Bean Salad

Celebrate sweet peppers with this refreshing summer salad! Use any kind of sweet pepper you would like, and even add a hot pepper for added flavor and spice! While this salad recipe calls for Great Northern Beans, you can use any kind that you have on hand, or even add a second bean for added texture.

Ingredients
  

Main

  • 2-3 Sweet Peppers (chopped)
  • 2 Tomatoes (diced)
  • 2 Ears of Corn (husked and cut off the cob)
  • 2 cup Cooked Beans
  • 1 Bunch Scallion (thinly sliced)

Dressing

  • 2 tbsp Neutral Oil
  • 1.25 cup Lemon Juice
  • Salt/Pepper to taste

Instructions
 

  • Drain and rinse the beans. If using dry, cook according to package instructions. Set aside.
  • In a large bowl, combine oil, vinegar, and salt and pepper.
  • Dice the sweet pepper, tomato, cucumber, and onion to about the same size as the beans.
  • Add the beans and chopped ingredients to the large bowl with the dressing. Gently toss to combine.
  • Serve chilled and enjoy!
