Sweet Pepper & Bean Salad
Celebrate sweet peppers with this refreshing summer salad! Use any kind of sweet pepper you would like, and even add a hot pepper for added flavor and spice! While this salad recipe calls for Great Northern Beans, you can use any kind that you have on hand, or even add a second bean for added texture.

Main
- 2-3 Sweet Peppers (chopped)
- 2 Tomatoes (diced)
- 2 Ears of Corn (husked and cut off the cob)
- 2 cup Cooked Beans
- 1 Bunch Scallion (thinly sliced)
Dressing
- 2 tbsp Neutral Oil
- 1.25 cup Lemon Juice
- Salt/Pepper to taste
Drain and rinse the beans. If using dry, cook according to package instructions. Set aside.
In a large bowl, combine oil, vinegar, and salt and pepper.
Dice the sweet pepper, tomato, cucumber, and onion to about the same size as the beans.
Add the beans and chopped ingredients to the large bowl with the dressing. Gently toss to combine.
Serve chilled and enjoy!
