Sweet Pepper & Bean Salad
Celebrate sweet peppers with this refreshing summer salad! Use any kind of sweet pepper you would like, and even add a hot pepper for added flavor and spice! While this salad recipe calls for Great Northern Beans, you can use any kind that you have on hand, or even add a second bean for added texture.

- 2-3 Sweet Peppers (chopped)
- 2 Tomatoes (diced)
- 2 Ears of Corn (husked and cut off the cob)
- 2 cup Cooked Beans
- 1 Bunch Scallion (thinly sliced)
Dressing
- 2 tbsp Neutral Oil
- 1.25 cup Lemon Juice
- Salt/Pepper to taste
Instructions
- Drain and rinse the beans. If using dry, cook according to package instructions. Set aside.
- In a large bowl, combine oil, vinegar, and salt and pepper.
- Dice the sweet pepper, tomato, cucumber, and onion to about the same size as the beans.
- Add the beans and chopped ingredients to the large bowl with the dressing. Gently toss to combine.
- Serve chilled and enjoy!
