Tomato & Peach Sauce
Peaches and tomatoes both have a sweet, juicy, and acidic quality - similar enough that some tomato-based recipes taste delicious when made with peaches. This sauce is the perfect balance of these summer flavors plus a little spice (if you want it to be) from a habanero.
- 1 large tomato or 1 pint cherry tomatoes, chopped
- 1 large peach or 4-5 small peaches, chopped
- 1-2 garlic cloves, minced
- 2 tablespoons fresh herbs (basil or parsley recommended), finely minced
- Salt & pepper, to taste
- optional: 1 hot pepper minced (habanero or serrano)
Heat the oil on medium heat and add the garlic. Sauté until it becomes fragrant and begins to lightly brown.
Add the tomato and peach to the pan. Sauté for an additional 5-10 minutes or until they begin to break down and darken in color. As you sauté, smash the tomato and peach with the back of a large spoon to your desired consistency.
If using hot pepper, add to the sauce. Season with salt and pepper. Cook until the tomato and peach have combined together and the sauce is your desired consistency.
Garnish with chopped herbs.
Serve hot or cold on pasta, rice, or as a dip with snacking peppers.
