Tomato & Peach Sauce

Tomato & Peach Sauce
Peaches and tomatoes both have a sweet, juicy, and acidic quality - similar enough that some tomato-based recipes taste delicious when made with peaches. This sauce is the perfect balance of these summer flavors plus a little spice (if you want it to be) from a habanero.
Ingredients
- 1 large tomato or 1 pint cherry tomatoes, chopped
- 1 large peach or 4-5 small peaches, chopped
- 1-2 garlic cloves, minced
- 2 tablespoons fresh herbs (basil or parsley recommended), finely minced
- Salt & pepper, to taste
- optional: 1 hot pepper minced (habanero or serrano)
Instructions
- Heat the oil on medium heat and add the garlic. Sauté until it becomes fragrant and begins to lightly brown.
- Add the tomato and peach to the pan. Sauté for an additional 5-10 minutes or until they begin to break down and darken in color. As you sauté, smash the tomato and peach with the back of a large spoon to your desired consistency.
- If using hot pepper, add to the sauce. Season with salt and pepper. Cook until the tomato and peach have combined together and the sauce is your desired consistency.
- Garnish with chopped herbs.
- Serve hot or cold on pasta, rice, or as a dip with snacking peppers.
