Balsamic-Glazed Root Vegetables

Balsamic vinegar has a strong and slightly sweet rich flavor. This vinegar pairs especially well with earthy flavors in root vegetables like turnips, carrots, and parsnips, but it also complements sweet fruit such as strawberries!

Ingredients
  

  • 1/2 cup balsamic vinegar
  • 2 tbsp sugar or honey
  • 1 tbsp mustard
  • 3 cup root vegetables, chopped, any kind- such as carrots, turnips, beets, etc.
  • Salt and pepper, to taste

Instructions
 

  • Preheat the oven to 350 degrees F. 
  • In a small pot, combine the vinegar, sugar, and mustard. Bring to a boil and then reduce the heat to low. 
  • Cook for an additional 5 minutes, stirring as needed so that it does not stick. The glaze should thicken slowly as it cooks. 
  • Peel and cut the root vegetables into bite-sized pieces. Combine with the balsamic glaze, evenly coating the vegetables.
  • Transfer the vegetables to a baking sheet lined with foil. Roast for 35 minutes or until a crust forms over the vegetables and they are tender.
