Cauliflower & Apple Salad
Broccoli, cauliflower, cabbage, and even Brussels sprouts are all cruciferous vegetables. This group of leafy greens, cabbages, and mustard-like veggies pack a nutritional punch, a satisfying crunch, and versatile flavors.For a touch of sweetness and even more health benefits, try adding raisins to this salad.
Ingredients
- 1 large head of cauliflower, cut into florets and thinly sliced
- 2 medium sized apples, cubed
- 1 onion (any kind), thinly sliced or diced to your preference
- 3 tbsp olive oil
- 3 tbsp preferred vinegar
- 1 ½ tsp dried herb blend (or 1 tbsp fresh herbs)
- Salt & pepper to taste
Instructions
- Whisk together the oil, vinegar, and herb blend in a large bow
- Add the cubed apples, sliced cauliflower, and sliced/diced onion to the large bowl with dressing. Gently toss together.
- Season with salt and pepper.
