Cauliflower & Apple Salad

Broccoli, cauliflower, cabbage, and even Brussels sprouts are all cruciferous vegetables. This group of leafy greens, cabbages, and mustard-like veggies pack a nutritional punch, a satisfying crunch, and versatile flavors.
For a touch of sweetness and even more health benefits, try adding raisins to this salad.

Ingredients
  

  • 1 large head of cauliflower, cut into florets and thinly sliced
  • 2 medium sized apples, cubed
  • 1 onion (any kind), thinly sliced or diced to your preference
  • 3 tbsp olive oil
  • 3 tbsp preferred vinegar
  • 1 ½ tsp dried herb blend (or 1 tbsp fresh herbs)
  • Salt & pepper to taste

Instructions
 

  • Whisk together the oil, vinegar, and herb blend in a large bow
  • Add the cubed apples, sliced cauliflower, and sliced/diced onion to the large bowl with dressing. Gently toss together.
  • Season with salt and pepper.
