Tabbouleh-Inspired Beet Salad
Inspired by traditional tabbouleh which is made with bulgar wheat, tomatoes, parsley, mint, and onion - this salad showcases beets and parsley along with pantry staple, rice.
Ingredients
- 1 cup rice, prepared
- 2-3 beets, peeled and grated
- Beet greens, reserved and chopped
- 1 bunch parsley, finely chopped
- 3-4 scallions, thinly sliced
- 4 springs oregano, leaves finely chopped and stems discarded
Dressing
- 2-3 tbsp olive oil
- 1/4 cup vinegar (your favorite kind)
- salt & pepper to taste
- optional: pinch of red pepper
Instructions
- Prepare the rice according to package directions
- Prepare all of the vegetables and herbs and add to a large mixing bowl.
- Whisk together the dressing ingredients and pour over the vegetable mixture.
- Season with salt and pepper to taste. Add red pepper flakes if using.
