Tabbouleh-Inspired Beet Salad

Inspired by traditional tabbouleh which is made with bulgar wheat, tomatoes, parsley, mint, and onion - this salad showcases beets and parsley along with pantry staple, rice.

Servings 4

Ingredients
  

  • 1 cup rice, prepared
  • 2-3 beets, peeled and grated
  • Beet greens, reserved and chopped
  • 1 bunch parsley, finely chopped
  • 3-4 scallions, thinly sliced
  • 4 springs oregano, leaves finely chopped and stems discarded

Dressing

  • 2-3 tbsp olive oil
  • 1/4 cup vinegar (your favorite kind)
  • salt & pepper to taste
  • optional: pinch of red pepper

Instructions
 

  • Prepare the rice according to package directions
  • Prepare all of the vegetables and herbs and add to a large mixing bowl.
  • Whisk together the dressing ingredients and pour over the vegetable mixture.
  • Season with salt and pepper to taste. Add red pepper flakes if using.
