Parmesan Crusted Acorn Squash

Ingredients:

  • 1 acorn squash
  • 2 tbsp oil
  • 1/4 cup parmesan cheese
  • 2 tsp garlic powder
  • salt and pepper to taste

Instructions
 

Directions:

  • Preheat oven to 400 degrees
  • Cut squash in half and remove the seeds from center. Then cut each half into 1-2 inch slices.
  • Combine the oil, parmesan, garlic powder, salt and pepper in a bowl. Toss in the slices of squash and ensure they are fully coated with the cheese mixture.
  • Spread the coated slices out on a baking sheet and bake for 15 minutes. Turn the slices over and bake for an additional 15-20minutes or until they are crispy on the outside.
  • Serve and enjoy!
