Corn & Pepper Grain Bowl

Make the most of sweet, crunchy corn on the cob with this simple, healthy and most important tasty corn, pepper and hearty grain bowl. Like many of our recipes this is a great base and can easily be adjusted to your liking and the season.

 1 cup grain blend (e.g. quinoa, rice, barley)
 1 ear of corn, kernals off the cob
 2-3 poblano peppers, diced
 1-2 jalapeño peppers, finely chopped. Remove seeds for less heat
 3-4 scallions, thinly sliced
 2 tbsp olive oil
 2 tbsp lime juice or apple cider vinegar
 Salt & Pepper to taste.

Cook grains according to package directions and set aside to cool.

While the grains are cooling, cut and prepare your corn, peppers, scallions, and any other vegetables you may want to add.

Combine the cooled grains, oil, and vinegar with the vegetable mixture and stir to combine.

Add salt and pepper to taste or other spices to your liking. Enjoy!

Additional Notes

The corn is left raw for the recipe for an extra crunch, but you can cook it if you prefer.

For a different flavor profile, change up the spices. Try cumin and oregano or any of your favorites.
