Asparagus & Radish Salad

The crunchy, peppery bite of radishes and the mild flavor of tender asparagus mix into a wonderful salad. Don't toss the tops! Radish greens add a splash of color and a delightful texture, making this salad not only delicious but also visually stunning.

 1 bunch asparagus, chopped into 1 inch pieces
 1 bunch radishes with green tops, thinly slice radishes & reserve tops
 1 small bunch scallions, thinly sliced white and green parts
Dressing
 1 ½ tsps dried herb blend, such as Italian blend
 2 tbsp neutral oil
 2 tbsp honey
 2 tbsp lemon juice or apple cider vinegar
 salt & pepper to taste

Chop the asparagus, scallion and radish tops. Thinly slice the radishes. Set aside

In a large bowl, whisk the oil, honey, apple cider vinegar (or lemon juice), and dried herbs. Salt and pepper to taste.

Add the vegetables and greens to the bowl and gently toss to combine. Serve & enjoy!
