Cauliflower & Apple Salad

This cruciferous salad packs a nutritional punch, a satisfying crunch, and a mouthful of versatile flavors.

Yields4 Servings
 1 large head of cauliflower, cut into florets and thinly sliced
 2 medium sized apples, cubed
 1 onion (any kind), thinly sliced or diced to your preference
 3 tbsp olive oil
 3 tbsp preferred vinegar
 1 ½ tsp dried herb blend (or 1 tbsp fresh herbs)
 Salt & pepper to taste

Whisk together the oil, vinegar, and herb blend in a large bow

Add the cubed apples, sliced cauliflower, and sliced/diced onion to the large bowl with dressing. Gently toss together.

Season with salt and pepper.
