Kohlrabi, Apple, and Collard Green Salad
Kohlrabi is related to broccoli and cabbage but has a sweeter taste. It can be eaten raw or cooked.
Peel the kohlrabi and cut into thin matchstick pieces.
Repeat the same process with the apple and mix together with kohlrabi.
Roll collard and kohlrabi greens into a cigar shape and cut into slices.
Combine greens with the kohlrabi and apple and set aside.
Place 1/4 cup of the vinegar into a medium bowl.
While mixing, slowly pour in 2-3 tablespoons of oil.
Add salt, pepper and adobo blend.
Pour on top of the kohlrabi and apple mixture.
Serve and enjoy!

You can also try this salad by adding fresh radishes, carrots, and bell peppers! Or add fresh herbs or any of your favorite flavors!
Fun fact: kohlrabi contains more vitamin C than an orange!
