Strawberry, Spinach & Garlic Scape Salad

Garlic scapes are the curly, green shoots that grow from garlic bulbs, offering a mild, delicate garlic flavor that adds a unique twist to this salad without overpowering it. Combined with the sweetness of strawberries and the earthiness of spinach, the subtle garlic zing from the scapes creates a symphony of flavors in every bite.

Yields1 Serving
 1 pint strawberries
 1 small bunch garlic scapes, finely chopped (or shaved with a peeler)
 2 cups leafy greens, roughly chopped
 5 tbsp lime juice
 2 tbsp honey
 optional: 1/4 cup of feta cheese or Oaxaca

In a small bowl, mix the lime juice and honey. Set aside.

Chop the strawberries, garlic scapes, and leafy greens into bite-sized pieces.

Pour the lime juice and honey dressing on the salad and mix.
