Tabbouleh-Inspired Beet Salad

Inspired by traditional tabbouleh which is made with bulgar wheat, tomatoes, parsley, mint, and onion - this salad showcases beets and parsley along with pantry staple, rice.

Yields4 Servings
 1 cup rice, prepared
 2-3 beets, peeled and grated
 Beet greens, reserved and chopped
 1 bunch parsley, finely chopped
 3-4 scallions, thinly sliced
 4 springs oregano, leaves finely chopped and stems discarded
Dressing
 2-3 tbsp olive oil
 ¼ cup vinegar (your favorite kind)
 salt & pepper to taste
 optional: pinch of red pepper

Prepare the rice according to package directions

Prepare all of the vegetables and herbs and add to a large mixing bowl.

Whisk together the dressing ingredients and pour over the vegetable mixture.

Season with salt and pepper to taste. Add red pepper flakes if using.

Additional Notes

Try making this recipe with any of your favorite summer herbs and vegetables. If you don't have fresh herbs on hand you can use dried but be sure to use less because the flavor is more intense.
