AuthorAnne ShuniakCategory

Bowl meals have become a 'trendy' menu item, but we've always been a fan because it's easy to prepare and a great way to turn random ingredients into a healthy dinner. A good grain bowl can be simple in ingredients but be sure it is well-seasoned, and play up contrasts in color, texture, and flavor.

Grains
 8 oz. grain bowl mix
 1 3" piece lemongrass
 2 cups water
Winter Squash
1-2 winter squash (seeds reserved), diced and roasted (peeled depending on the variety of squash)
olive oil, salt, and pepper for roasting
Roasted seeds for garnish
 squash seeds, cleaned and dried
garlic powder, salt, and pepper to taste
 1 tsp cooking oil
 1-2 scallions, thinly sliced
Grain Instructions
1

Prepare the grain bowl mix to the package instructions. Be sure to add the lemongrass along with water and salt. Cook until all water has been absorbed. Set grain aside.

Squash Instructions

3

Additional Notes

Use any winter squash you like: delicata, acorn, butternut, or even pumpkin work wonderfully in this hearty meal! No need to peel delicata squash - as their name implies the skin becomes tender when cooking.

Lemongrass is a fibrous stalk that grows mostly underground. When prepared, it has a mild citrus flavor. It is often found in Thai and Vietnamese cuisine.  For this recipe, use the back of your knife to hit the lemongrass to soften the fibers and release the aromatic flavor. You can also thinly slice or microplane to add flavor to the dish but be sure to dispose of any fibrous pieces.
